Eid is just around the corner, and celebrations aren’t too far. It is common for families to visit one another for Eid to share the joy of happiness and celebration. However, with the pandemic looming over our heads, it is almost impossible for us to visit our near and dear ones. However, we can make Eid more colourful and tastier with delightful and sumptuous Eid recipes that will surely tantalise the taste buds of your loved ones. Beginning with a starter and ending with a dessert, this feast will surely give your tastebuds an experience that encompasses all tastes.
The best part about this meal is that it requires only two hours of preparation and can comfortably serve a family of four at the very least!

Seekh Kebab : Start with a crispy Spin.
Add flavour to your Eid meal by making this tasty appetiser for your loved ones, and let this dish be the starting point to delightful Eid. To make this dish mince pieces of lamb and marinate them in a mix that comprises coriander powder, fenugreek, salt, black pepper, chilli powder, ginger paste, and garlic paste mixed in a base that is made of hung curd or Greek yogurt. Mix the meat and marinate and leave in in the refrigerator for approximately five hours.
After five hours, make long cylinders using the kebab mixture and place them on skewers (seekh) and apply oil on the uncooked kebabs. Either roast the kebabs in an oven at 200oC for 30 minutes or place the skewers on Premier’s non-stick tawa and cook the kebab. Keep turning the skewers until all sides are well done. Serve the kebabs with onion and mint chutney.
Biriyani : Variety is the Spice of Life
An Eid that is commemorated with delicious Biriyani, is an Eid well celebrated. While different varieties of Biriyani are available, the one thing common between all of them is that they can be made in minutes using the premier biriyani pot. Cook long grained biriyani rice or basmati rice using a Premier Pressure cooker or biriyani pot. Let the rice cool and reach room temperature. Prepare a semi-dry gravy by roasting and then blending garlic, ginger, chilies, cashews, onion, tomato, coriander and garam masala. Fry pieces of lamb in ghee and set aside. Mix the rice, lamb, and gravy in cook on a low flame till the mixture blends in homogeneously. Alternatively, the rice can be cooked in the gravy directly.

Korma : The subtlety of Taste
While the Biriyani, a delectable blend of spices is the highlight of Eid, it is generally not consumed on its own. Mild vegetable korma, a stew made from milk or coconut cream is a great accompaniment to biriyani. The subtle sweetness of coconut milk lends equilibrium to the otherwise spicy biryani and creates an unparallel gastronomic experience that plays itself out on the tongue.
To make korma, finely chop carrots, potato, cauliflower, and any other vegetable of your choice and cook it in the Premier Pressure Cooker for one whistle. Prepare a paste comprising coconut milk (or milk), cashew nuts, fennel seeds and coriander seeds. Mix the vegetables into this paste and let it cook for one whistle. Add a dash of salt to the Korma and mix thoroughly.

Haleem : A dish like none other
Haleem is a standalone dish that offers all the nutrients one needs post a stressful month of fasting. It includes a mix of lentils, rice, and oats. To make a tasty Haleem dry roast a mixture of broken wheat, Bengal gram, moong dal, masoor dal for a few minutes and then grind it to a coarse powder using Premier’s Mixer Grinder. Post preparing the powder, in a non-stick Kadai fry ginger, garlic cumin, cinnamon, cardamon, and green chillies in a spoon of ghee for a minute. Add onion and fry the mixture till the onions turn golden or translucent. Add some ginger garlic paste, chicken or mutton keema and continue to roast till the meat dries up completely. Add the previously prepared Haleem powder, yogurt, turmeric, and red chillies to the mixture and stir for a few minutes. Cook this mixture with water in a pressure cooker for four to five whistles to get the tastiest Haleem you would have ever had. Garnish with a little coriander!
Phirni : Ending with a sweet
A great meal, no matter what the occasion is, ends with a dessert. Phirni, a simple dessert made of rice, milk, sugar, and cardamom is a grand, simple, and tasty finale befitting of the Eid meal. To prepare phirni, roast basmati in ghee and grind it to a coarse powder using a Premier Mixer Grinder. Heat Milk in a Premier Pan and add the coarsely ground rice and sugar to the milk, while continuously stirring the mixture. If desired, add some cardamom, a few cashews, and a few strands of saffron the give the phirni as rich taste. Either serve warm or refrigerate and serve cold.
Another great Eid Dessert is Shahi Tukda, a bread pudding made by soaking bread in a sweet gravy of milk, sugar, and almonds. Gajar Halwa, cooked in a Premier Pressure Cooker, takes less than ten minutes and is another good dessert option for Eid.
